In the aroma piece, the amylase enzymes present in the active baking malt split the starch of the flour into maltose (malt sugar). At the same time, the mass browns and thickens. The result is a highly aromatic, sweet and malty flour cooking piece that can be added to almost all bread doughs to make them more aromatic as well as keeping them fresh.
